How to make an Easter bunny cake

 

An Easter bunny cake made with cupcakes, icing and marshmallows is so simple a child can easily assemble it with a bit of help from a grownup.  Little hands are just the right size for holding and icing each cupcake, and children won’t mind the stickiness of fluffy white frosting and sweet mini-marshmallows.

When guests gather for an Easter celebration, put the little ones to work on this project, with the guidance of one or two adults.  The end result will be a wonderful, tasty dessert for Easter dinner--and some very proud kids.

Instructions
Step 1

Cover a 17-inch by 20-inch piece of cardboard with aluminum foil and assemble ingredients on large working space.  

 

 


Step 2

Place white mini-marshmallows in a large shallow bowl.  In a small bowl, mix 2 heaping tablespoons of icing with a few drops of pink food coloring; add more coloring, if needed, to reach the desired shade of pink.

Step 3

 Ice a cupcake, turn it upside down and dip it in the white mini-marshmallows.  Cup a hand around the outer, upper edge and gently squeeze the marshmallows onto the top of the cupcake.

Step 4

Place the cupcake on the foil-covered board as shown in the pictures.  Repeat with the rest of the cupcakes.  Bottom row: 3 cupcakes.  Rows 2 and 3: 4.  Rows 4: 3.  Each ear: two rows of 2 cupcakes each; top row has 1 cupcake. 

Step 5

Sprinkle pink mini-marshmallows down the center of each ear as shown in the photographs. Place peppermint patties on cake for the bunny’s eyes.  Spoon pink icing in place for a nose.  Cut tip off black gel tube and draw whiskers and mouth.

Step 6

Once more go around the outer edge of the “bunny” gently pushing marshmallows toward the inside to smooth out the bunny’s edges.  Add more marshmallows to fill any gaps.

 


 

Things Needed
17 x 20” piece of cardboard
aluminum foil
24 cupcakes in white cupcake papers
2 cans fluffy white frosting (or an equivalent of homemade icing)
pink food coloring
10.5 oz. white miniature marshmallows
10.5 oz. pink miniature marshmallows
2 small dark chocolate Peppermint Patties
small tube (.75 oz. more or less) black decorating gel
Tips & Warnings   
Bake cupcakes in white cupcake papers and leave the papers on when assembling the cake
Remove hot cupcake tin from oven for very small children
Cool cupcakes thoroughly before frosting them
Shake or stir the marshmallows occasionally to flatten out the pile slightly.
More marshmallows can be used to fill in gaps on and between cupcakes after the “bunny” is assembled
